This recipe is a favorite as it incorporates zucchini, carrots, squash or sweet potato with the sweetness of apple. The addition of cinnamon, ginger and turmeric reduce inflammation, enhance digestion and circulation, strengthen the immune system and are a good source of antioxidants. Thyme adds earthiness and depth to flavor. I love substituting essential oils whenever possible as they add so much more depth of flavor. 

If you double this recipe, the following substitutions can be made:
1 drop Thyme Vitality essential oil per 1 tsp dried Thyme
1 drop Cinnamon Bark Vitality essential oil per 1/2 tsp ground Cinnamon
1 drop Ginger Vitality essential oil per 1.5 tsp ground Ginger

You can easily omit the coconut sugar as the beets, apple and raisins provide enough sweetness. For more nutrition Ningxia Wolfberries can easily be substituted for the raisins. Instead of the fresh Rosemary, try adding just 2 drops of Rosemary Vitality essential oil instead. And, if you do not have Balsamic vinegar, Apple Cider Vinegar is a perfect substitute.
